MARMELLATA DI PEPERONI / PEPPER JELLY

Like any respectful Italian immigrant I stuffed my suitcase with italian food coming to Knoxville. My boyfriend was shocked... "did you think u were going to Africa??!". But I mean... I can't find all the delicacies we have at home or if so, you pay them like gold. So for Christmas I brought a couple of Panettone from my fav "Pasticceria" and a few good cheeses. Since I have a lot of time at the moment, I decided that is time for me to become a Jam girl and serve it together with cheeses for Christmas. I always wanted but I was a bit intimidated but the canning process but in the end it is not that complicated. You need to follow all the steps and be very precise but it is not difficult. I chose Bell Pepper Jelly as my best friend's mom always give me one when she comes to visit Antonio from Salerno.



INGREDIENTS FOR 2 JARS:


  • 1kg mixed bell peppers

  • 400g sugar

  • 200ml white vinegar

  • 2 tsp chilli powder/flakes

  • 2 tsp salt


INSTRUCTIONS:

Slice the peppers thin removing seeds and the white parts, add all ingredients into a pot and let them cook on medium-low for an hour or more till the vinegar is almost gone and the jelly starts caramelize. You should pass them through a hand mixer but I didn't as I like it more like that.
